This is part of the winter release from the first vintage of an all-women trio of young winemakers out of the Adelaide Hills.
Joss, Mel and Sarah bring their multitude of skills together to create these gorgeous small batch releases, in this case sourcing top quality Chardonnay out of Mclaren Vale. Fermented partly in stainless steel and partly in French barriques which where gently stirred on lees once a month, this is complex, creamy and very well balanced Chardy with a well-integrated refreshing acidity. Think lemon zest and crème brûlée on the nose, with quince, starfruit and saline minerality on the palate. Awesome work, Parley!
