Aurelian Laherte's lip-smacking Rosé de Saignée is crafted from 100% Pinot Meunier drawn from multiple plots within Chavot's east-facing "Les Beaudiers" terroir. His fruit - from old vines planted in 1953, 1958, and 1965 - is macerated for 12 hours, wild fermented and aged for 6 months on large format oak. It's a ripe, pure saignée Champagne, with deep, crystalline raspberry fruit, torn mint leaf flavours and a nip of tannin on the finish.
