Riesling and Gruner Veltliner from the Slovenské vineyard. The soils here are a mix of loess, chernozem and clay. Elevage in large format old barrels made from local oak or acacia, on fine lees for 2 years. So inviting, heady aromas. Diving into the palate, a sensory overload. Lemonade fruit, elderflower, custard apple, a hint of ginger. Textural with perfect freshness. Salty and fine. Salivating.
