Winemaker Josephine Perry grew up fermentation, with her grandfather being a brewer in Perth's Swan Brewery, so it seemed like destiny that she would continue in this tradition.
Jo also worked at wineries in France, California, New Zealand, Spain and the Canary Islands before settling back at home in WA and establishing Dormilona. The Clayface series of wines have all spent time maturing in Italian Amphora, with this hand harvested Cabernet being destemmed before spending 5 months on skins! This is not made like your typical Cabernet, but it is a unique expression displaying red and dark berries and a really beautiful textural core from all that time maturing in the Amphora. A Margaret River gem!
