Everyone's doing pet nat & now everyone is doing piquette, so i thought - why no do something a little different... col fondo style. Riesling bubbles - made like a sparkling wine but with less fizz and undisgorged. Slightly cloudy combined with the light bead gives great mouthfeel, a tiny touch of residual sugar balances off the natural fresh acidity. Drink in the sunshine. Mansfield, Vic. Riesling farmed to biodynamic principles, cold soaked for 48 hours then whole bunch pressed to stainless for fermentation. Secondary fermentation in bottle for the fizz. No additions.
