2022 Experimental Chardonnay In Limbo

This Chardonnay was sourced from the Two Rivers Vineyard. The fruit was de-stemmed and wild fermented on skins for one week before being pressed off. The wine was allowed to go through a full malolactic fermentation in a concrete egg, where it underwent élevage. This light, crisp, perfumed style of Shiraz was sourced from our Vinden Vineyard planted in 1995 over red clay soil and our Somerset Vineyard planted in 1960’s. 15% whole bunch, 85% whole berry in open concrete fermenters, hand plunged, basket pressed and aged for 4 months in neutral French oak barrels and Concrete.
