Buttermans Track vineyard in St Andrews. Steep, tough clay/rocky soils. Grower Joel Trist working hard on building top soil and diversity for years now. Been working with him for 4-years. Pinot always struggles. He tries to get it to me each vintage but have only had enough to sell 2 out of the last 4 years. 2021 was just 1-tonne. Wholebunch ferment for 7-days. 6-months old oak, 2-months tank.
