Cabernet Sauvignon and Merlot are varieties which my father has planted and liked. I agree. Both varieties are grown on north-facing aspects of two different blocks. The varieties show balance, flavour and tannin development, while retaining bright acidity. This wine is a blend of Merlot (33%) and Cabernet Sauvignon (67%). The soil is blue and red clay over schist and ironstone; loam over red clay and sandstone. Each component fermented separately. Both de-stemmed in 1500 vats with gentle pump-overs for around ten days. Matured in seasoned French hogsheads for seven months.
