Chardonnay from the beautiful Adelaide Hills.
Chardonnay (100% Mendoza old vine clone) vines are dry grown. The bunches are tiny and riddled with hen and chicken berries. Whole bunched pressed to seasoned old french oak barriques with occasional battonage. One of the barrels took forever to finish fermenting sugar so the wine was bottled later than usual after 14 months. Bottled with love and minimal sulphides. Spicy, fleshy and textural.
