Direct press, 8 months on lees. Incredibly composed, Le Souffle is really elegant after an additional 12 months elevage in France. Expressive nose, Packham pears, soft herbs, sun-kissed, meyer lemon, layered and textured, but softly textured. A slippery rivulet. Complex and pure.
