Aglianico is pressed directly after fermentation and then put into the bottle the following May along with some sweet Aglianico from the previous vintage. The second fermentation takes place in the bottle and there is no disgorgement, resulting in a dry sparkling wine with cherry, pungent acidity, and earthy minerality.
