A sous voile (oxidative) wine.
This is essentially the cuvée Castor base wine with 50% Chardonnay and 50% Savagnin all manual harvest and into stainless for fermentation. After blending it is transferred to old 225L barrels where it spends 30 months under a veil of yeast before being bottled with a small amount of sulphur. Nut husk, preserved lemon, brush, lime blossom, dried stone fruits and a lick of iodine. Very good balance of rich Chard fruit and the more austere Savagnin. Loads of salinity and curry spices with a long front to back drive that carries all the flavours well. So moreish.
