An amazing sparkling wine produced from a profoundly complex orange wine even though the maceration is only four days – a manual press does the job of building detail, they say.
Olimpia is an 85 year old lady in the greco di tufo area who has made wine like this since she can remember. She gets must from the first fermentation, freezes it (or in the past used a late fermentation, pre freezers), and does a second fermentation in bottle. Pet nat old way. Amazing wine here, textural, chewy, chalky, so vivacious and fresh. Mandarin juice, farmhouse cider, light bead, frisky finish. Light yet also complex. Has lots of character. LOTS.
