Vinified in rectangular small open wax lined concrete fermenters, 15% whole bunch, indigenous yeasts, hand plunged, long extended post ferment maceration , unforced naturally occurring malolactic fermentation, unfined, unfiltered & un-tinkered, minimal sulphites added at bottling.
